INGREDIENTS 6 large potatoes; ⅔ cup (55 g) cheese, cut into squire; ⅔ cup (65 g) ham, cut into squares; 6 eggs ; Salt and pepper.
METHOD
Preheat the oven to 190 degrees Celsius/375 degrees Fahrenheit.
With a fork, prick the potatoes all over. Brush with oil and bake for 1.5 to 2 hours, or until thoroughly done. Allow to cool completely.
Remove the tops of the potatoes and carefully scoop out the insides, leaving some potato on the sides.
Fill each potato “boat” with an egg, ham, salt & pepper, cheese, and mashed potatoes.
Bake the stuffed potatoes for 20 minutes before serving.
