Ingredients
1 chopped tiny onion 8 ounces baby Bella mushrooms
1 tablespoon of extra virgin olive oil
1 pound sirloin steak, sliced into strips with superfluous fat removed
seasoned with salt and pepper
1 tablespoon of Worcestershire sauce
14 cup dry red wine (plus a splash for deglazing)
2 to 12 cup fat-free beef broth
14 cup cold water + 2 tablespoons corn starch
Tips for Making Slow Cooker Beef
Fill a 4.5-quart slow cooker halfway with onions and mushrooms.
Then, in a big skillet over medium-high heat, heat the oil. Season the steak strips liberally with salt and pepper and add them to the hot skillet, searing the meat on all sides for about 3 minutes; do not cook through.
Place the meat on top of the vegetables in the slow cooker.
Scrape the bottom of the hot skillet with a couple tablespoons of red wine to remove any browned meat bits. Place these in the crock pot.
Season the beef once more with pepper, then add the Worcestershire sauce, red wine, and beef broth. Cook on low for 6-8 hours, covered.
Remove the top and gradually whisk in the cornstarch/water mixture. Cook for another 45 minutes on high, or until the gravy has thickened.
Serve the beef tips over brown rice, buttered egg noodles, or mashed potatoes, as shown.
