THE FUNNEL CAKE

Ingredients: 8 cups frying vegetable oil
1 12 cup milk
two huge eggs
2 c. all-purpose flour
1 tablespoon baking powder
12 teaspoon cinnamon powder
12 teaspoon salt
34 cup confectioner’s sugar
Directions:
Preheat a deep-fryer or large skillet with vegetable oil to 375°F (190°C).
Whisk together the milk and eggs in a large mixing basin until well blended.
In a separate basin, combine the flour, baking powder, cinnamon powder, and salt.
Add the flour mixture to the egg mixture gradually, stirring until smooth.
With one hand, cover the funnel opening and pour 1 cup of batter into it.
Pour the batter in a swirling manner from the center to form a 6 or 7-inch spherical shape.
Fry the batter until golden brown on both sides.
Remove the fried batter and drain excess oil on paper towels.
Confectioners’ sugar should be sprinkled over the fried batter.
Enjoy the funnel cakes while they are still warm.
