This is an exact replica of the well-known Outback Steakhouse Alice Springs Chicken. Boneless chicken breast covered with cheese and bacon is a simple recipe.

3 big skinless, boneless chicken breasts
6 thick-cut bacon pieces
2 C. Cheddar cheese, shredded
Salt and pepper to taste ⅓ C. Green onions, chopped, for garnish

Preheat the oven to 350°F.
Each chicken breast should be cut in half lengthwise.
Bake for 25 minutes, seasoning each side of the chicken with salt and pepper to taste.
While the chicken is cooking, partially fry the bacon until all of the fat has rendered but it is not crispy.
After removing the chicken from the oven, break each piece of bacon in half and arrange the bacon strips on top of each piece of chicken.
Return the chicken to the oven and bake for another 10 minutes.
Remove the chicken from the oven, sprinkle with the shredded cheese, and bake for another 5 minutes.
Before serving, garnish with green onions.
