Ingredients
1kg (2lb) cooked potatoes
two egg yolks
12 teaspoon nutmeg
Season with salt and pepper to taste.
100g grated parmesan (1 cup)
3 tablespoons parsley, chopped
2 eggs, breadcrumbs for coating
1 pound mozzarella cheese
Preparation
Cooked potatoes should be peeled and mashed.
Combine mashed potatoes, salt, pepper, nutmeg, egg yolks, and parmesan cheese.
Make rectangles out of the cheese.
Form a patty out of mashed potatoes and wrap it around the cheese, making sure it is well covered.
2 eggs, whisked; coat each potato fritter with egg and breadcrumbs.
6-7 minutes, or until evenly browned.
