1 jar washed and diced dried beef slices
4 tablespoons butter
4 tablespoons flour
a pinch of cayenne pepper
2 quarts milk
To taste, season with sea salt and freshly cracked pepper.
Making Creamed Chipped Beef on Toast
Rinse the dried beef slices thoroughly; they are VERY salty! After thoroughly rinsing, gently dry with a paper towel.
Cut the beef into bite-sized chunks. Place aside.
In a large saucepan over medium heat, melt the butter.
Whisk in the flour and a pinch of cayenne pepper until well mixed and heated through, about 45 seconds.
While whisking constantly, slowly drizzle in the milk.
When all of the milk has been added, add the chopped dried meat.
Cook for a few minutes, stirring occasionally, until thickened.
Season to taste with sea salt and freshly cracked pepper, if desired.
Serve immediately on top of dry toast. Enjoy.
