Potato croquettes: fast, flavorful, and ideal for a light meal.

1 kilogram (2 pounds) potatoes
60 g (¼ cup) 14 teaspoon nutmeg, grated parmesan
5 g (2 tbsp.) parsley, chopped
seasoned with salt & pepper
two egg yolks
3 eggs
250 g (2 cups) breadcrumbs panko
Fryable vegetable oil

1 METHOD Boil potatoes till tender (skin on). Allow them to cool before peeling.

Mix the potatoes with salt, pepper, nutmeg, parsley, egg yolks, and parmesan.
Make finger-shaped cutlets out of the mashed potatoes. Roll the potato sticks in the breadcrumbs after dipping them in the beaten eggs.
Preheat the vegetable oil to medium heat and fry the potato sticks for 3-4 minutes or until golden brown and crispy. Serve immediately.
