RICE WITH CHICKEN AND GARLIC PARMESAN

Garlic-infused chicken Parmesan rice is ideal for quick weeknight dinners. This simple chicken and rice recipe is not only excellent, but it also uses items you most likely already have on hand. Combine chicken tenders, white rice, and white wine to make this simple dinner!

Ingredients

2 tablespoons olive oil

12 cup butter (1 stick)

Chicken tenders 1 pound

12 teaspoons garlic powder

2 tablespoons minced garlic

1 teaspoon salt, divided 14 teaspoon red pepper flakes

1 12 cup uncooked white rice

12 cups dry white wine (like Pinot Grigio)

12 cup grated or shredded Parmesan cheese

3 cups of chicken broth

seasoned with salt & pepper

How to Cook Garlic Chicken Rice with Parmesan

Step 1: Warm the olive oil in a large skillet over medium heat. Meanwhile, season the chicken with salt, pepper, and garlic powder to taste. Sear the chicken in the skillet until it is browned and cooked through. When finished, set aside.

Step 2: Add the butter, garlic, pepper flakes, and 12 teaspoon salt to the same skillet. Cook for a few minutes over medium heat. Turn the heat up to medium-high and add the white wine. Cook, stirring regularly, for about 5 minutes. Save 3 tablespoons of the pan sauce for later.

Step 3: Add the uncooked rice to the remaining butter sauce in the skillet. Stir thoroughly. Pour in the chicken broth and season with the remaining 1/2 teaspoon salt. Bring all of the ingredients to a low boil. Once the water is boiling, reduce the heat to medium-low. Cover and cook for about 20 minutes, or until the rice is cooked, stirring frequently.

Step 4: Sprinkle with Parmesan and place the chicken tenders on top. Remove the skillet from the heat and replace the cover. Allow the dish to rest for 5 minutes.

Step 5: Drizzle the reserved pan sauce over the chicken before serving. Garnish with parsley if desired. Enjoy!
