This is one of the quickest salads, but it does not look or taste thrown together! My hubby loves seafood salad more than I do. He ate practically all this recipe and then asked if I would prepare more. He is fortunate that it is simple to prepare!

INGREDIENTS
16 oz. Imitation crab flesh (flaked preferred)
1/2 cup finely diced celery
3 tablespoons coarsely diced red onion
1 teaspoon Old Bay seasoning
2 teaspoons fresh lemon juice
1 mayonnaise cup
1 1/2 tablespoons chopped fresh dill (or 1/2 teaspoon dried dill)
Salt and pepper to taste
DIRECTIONS
Combine the imitation crab, celery, red onion, Old Bay, lemon juice, mayonnaise, dill, salt, and pepper in a large mixing bowl.
Gently toss to coat.
Serve right away or cover and refrigerate. Salad can be refrigerated for up to 2 days.
The critical question is how you will serve this! We like to eat it with crackers or on a crusty baguette with salad. Consider the following suggestions:
Scoop into a butter lettuce cup and serve.
Add pasta for a chilled seafood pasta salad.
Fill puff pastry shells with seafood salad after baking them.
Fill a tomato with a seafood salad after hollowing it out.
Notes
- Old Bay seasoning is distinctive, and to my knowledge, no other herb complements it well. It usually is easy to find, but if you can’t find any, you can prepare a reasonably close spice blend.
There are 18 ingredients in Old Bay, and the complete list is a trade secret, so you do your best! The recipe calls for 1/2 teaspoon, and the following mixture yields around 1/4 cup. All you need is an airtight container to store it in, and you will find it helpful!
3/4 teaspoon salt
1 tablespoon celery seed
2 teaspoons sweet paprika
1 tablespoon ground dry mustard
1 teaspoon ground ginger
five bay leaves
1 teaspoon smoked paprika
1 tablespoon freshly ground black pepper
1 tablespoon freshly ground white pepper
1 tablespoon crushed red pepper flakes
1/8 teaspoon nutmeg
1/8 teaspoon ground mace
1/8 teaspoon cardamom powder
1/8 teaspoon allspice powder
1/8 teaspoon cinnamon
1/8 teaspoon ground cloves
BLEND ALL INGREDIENTS IN A SPICE GRINDER OR COFFEE GRINDER UNTIL THEY FORM A SMOOTH POWDER. *Keep in an airtight container or spice jar.
