Red Beans & Smoked Turkey

Red beans and smoked turkey is a robust and savory dish popular in the South. The smokey flavor of the turkey complements the rich and creamy red beans excellently. Here’s how to create this soothing dish:

Ingredients:

1 pound dried red kidney beans

1 pound smoked turkey leg, wings, or neck

1 chopped onion

1 sliced bell pepper 2 celery stalks 3 minced garlic cloves

two bay leaves

1 teaspoon thyme dried

1 tsp. dried oregano

1 tablespoon smoked paprika

1/2 teaspoon cayenne pepper (to taste)

Season with salt and black pepper to taste.

6 cups broth (chicken or veggie)

4 c. water

White rice, cooked and ready to serve

Green onions, chopped, for garnish

Instructions:

Soak the Beans:

  1. Rinse the dry red beans and place them in a large basin the night before.
  2. Cover with water and soak them overnight.
  3. Before using, drain and rinse the beans.

Aromatics should be sautéed:

Heat a tablespoon of oil in a big pot over medium heat. Mix in the onion, bell pepper, and celery. Cook until the vegetables have softened and the onion has turned transparent.

Add the Turkey and Spices: To the pot, combine the smoked turkey parts, minced garlic, bay leaves, dried thyme, dried oregano, smoked paprika, cayenne pepper, salt, and black pepper. Sauté for a few minutes to allow the flavors to blend.

Add the soaked and drained red beans, broth, and water to the pot. Pour in the chicken or veggie broth as well as the water. To blend, stir everything together thoroughly.

Simmer: Bring the mixture to a boil, then boil it to a low heat. Allow the beans and turkey to cook for 1.5 to 2 hours or until the beans are soft and creamy.

Remove the smoked turkey portions from the pot and shred them. Skin, bones, and any extra fat should be removed. Return the shredded turkey meat to the saucepan.

Seasoning: Taste the red beans and smoked turkey combination and make any necessary adjustments. To taste, add additional salt, pepper, or spices.

Serve the red beans and smoked turkey over top of cooked white rice. Garnish with chopped green onions for a pop of color and freshness.
