Fresh Strawberry Pie from Big Boys

Ingredients:

To make the pie crust:

1 pie crust (pre-made or homemade)

4 cups hulled and halved fresh strawberries

granulated sugar, 3/4 cup

2 teaspoons cornstarch

1 cup of water

1 tsp. lemon juice

Optional red food coloring (for a more brilliant hue)

Whipped Cream Topping:

1-gallon heavy whipping cream

Two tbsp powdered sugar

A half teaspoon of vanilla extract

Instructions:

Prepare the Pie Crust: If using a pre-made pie crust, blind bake or bake the crust until golden brown according to the package directions. If you’re using a handmade crust, prepare and bake it according to the directions on the package.

Mix the sugar and cornstarch in a medium pot to make the Strawberry Filling. While whisking, gradually add the water to get a smooth slurry.

Cook, stirring regularly, until the mixture thickens and clears in the saucepan over medium heat.

Remove the pot from the heat and whisk in the lemon juice and a few drops of red food coloring. The color should be a deep crimson.

Strawberries: Gently incorporate the halved strawberries into the heated filling mixture until evenly coated.

Prepare the Pie:

Spread the strawberry filling evenly into the pre-baked pie crust.

Chill: Refrigerate the pie for at least 2-3 hours or until the filling has set and the pie has cooled.

In order to make the White Cream Topping, whisk together the heavy whipping cream, powdered sugar, and vanilla extract in a mixing dish until stiff peaks form.

Spread the whipped cream on top of the strawberry filling just before serving. To add a decorative touch, pipe the whipped cream.
