CHIPPED BEEF CREAMED

“This was a recipe that my mother used to make. It is also possible to use 3/4 pound cooked, drained meat. SOS stands for Same Ole Stuff. Excellent comfort food! Either dish is simple to prepare and goes well with a cool beer. “Serve with toast.”

2 teaspoons melted butter
1 1/2 cups warm milk 2 tbsp all-purpose flour
1 jar (8 oz.) dry beef
1 tsp cayenne pepper
Creamed Chipped Beef Recipe:
Melt butter in a medium saucepan over low heat. To make a roux, whisk in all of the flour at once.

Whisk in the milk a bit at a time, then increase the heat to medium-high and cook, stirring constantly, until thickened.

Bring to a boil, then add the beef and cayenne pepper, heat through, and serve over toast.
