CASSEROLE WITH SWEET ONION

This dish for Sweet Onion Casserole combines sweet onions, Swiss cheese, and rice. It goes well with everything from grilled meats to roasted chicken. It’s a family favorite, and you’ll get excellent feedback every time you serve it.

34 cup uncooked basmati rice
5 c. water
14 cup melted butter
3 pounds finely chopped sweet onions
1 cup cream, half-and-half
1/12 teaspoon salt
2 cups shredded Swiss cheese (distributed)

Sweet Onion Casserole Recipe
Heat the temperature of the oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish with cooking spray.

In a large saucepan, bring water to a boil and add rice. Reduce the heat to low and continue to stir until the rice is half-cooked, about 5 minutes. Drain and set aside the rice.

In a large skillet over medium heat, melt the butter and sauté and toss the onions until transparent but not browned, about 8 minutes.
In a skillet, combine sautéed onions, butter, and rice; whisk in half-and-half, salt, and 1 3/4 cup Swiss cheese.

Transfer the mixture to the prepared baking dish, and top with the remaining 1/4 cup Swiss cheese.
Bake uncovered in a preheated oven for 1 hour, or until rice is cooked and top is gently browned.
