Peanut Butter Haystack No-Bake

Since I can remember, my grandmother has prepared these every holiday season.

I recall how much I adored them when I was a child. Aside from their taste, they were like a cross between candy and a cookie, and they were unlike the traditional Christmas or Easter sugar cookies I was used to seeing everywhere else.

Their luscious peanut butter and butterscotch flavor and crunch are almost too good to resist. Growing up, I always imagined they were tough to prepare, but I was completely wrong! They turned out to be a no-bake delicacy made with only three ingredients and couldn’t be easier to make.

Because of the ease of preparation, these are a no-brainer for any time you need a crowd-pleasing cookie, not just around the holidays. They have only three ingredients – four if you include the optional peanuts – and don’t require the use of an oven. The important ingredients in this recipe are butterscotch chips, peanut butter, and crispy chow mein noodles, which can be found in the international section of any grocery store.

INGREDIENTS
1 package (11 ounce) butterscotch chips
1 cup smooth peanut butter
1 can (5 oz) crunchy chow mein noodles
Optional: 1/2 cup salted peanuts

PREPARATION
Wax paper should be used to line a baking pan. Place aside.
Melt the butterscotch chips and peanut butter in a large pot over medium-low heat, stirring constantly.
Remove from heat and rapidly whisk in the chow mein noodles and peanuts (if using).
Drop by spoonfuls onto the wax paper, working fast. Allow to cool until set. Enjoy!
