Payday Candy Bars Made at Home

If you like Payday candy bars, this Payday cookie bars recipe is for you. This simple recipe is packed with peanut butter and marshmallow flavor and will leave you wanting just one more.

The Southern husband has taught me so many things. Convertibles, for example, are light-years ahead of normal automobiles. Few things beat crayfish boiled with Old Bay seasonings and accompanied by Dixie lager. I know more Springsteen songs than I can count. Payday candy bars, too.

Before he purchased me my first Payday bar all those years ago, I mistakenly assumed that all candy bars had to contain chocolate. Not so…The Payday bar contains peanuts and caramel with no chocolate in sight, yet it is delicious. You don’t see them very frequently, but when you do, it’s well worth investing in one. Or two. And if you can’t find an actual Payday bar (or even if you can! ), these Payday cookie bars are a close second.

Ingredients

1 box yellow cake mix for the cookie layer
2/3 cup melted butter
1 egg, teaspoon of salt- 2 cups mini marshmallows- 1 bag peanut butter chips
2 tablespoons butter
a third cup corn syrup
2 cups crunchy rice cereal
a sprinkle of salt 2 cups salted peanuts

Instructions

Combine the cake mix, butter, and egg in a mixing bowl. Place the mixture in a greased 9 x 13 pan. Bake for 20-25 minutes, or until the edges are golden brown, at 350°F.
Bake for an additional 5 minutes after adding the marshmallows to the cooked crust.
Melt the peanut butter chips, butter, and corn syrup in a skillet over medium heat to form the topping. Stir until completely smooth. Remove from the heat and stir in the cereal and peanuts. Once blended, evenly distribute the mixture over the foundation. Allow to completely cool before slicing into squares.
