Orange cookies: the simple recipe for iced orange biscuits

UNIVERSAL INGREDIENTS 400 g FLOUR (3 14 cup)170 g COLD BUTTER (3/4 CUP)100 g SUGAR (1/2 cup)3 tbsp. ORANGE JUICE 40 mLEGG 1 CHEMICAL YEAST 1 TSPTHE ORANGE’S ZESTA LEMON ZEST A PINCH OF SALT POWDERED SUGAR POWDERED SUGAR ORANGE MARMALADE

Instructions:

Combine the flour, salt, and baking powder in a mixing bowl.

Mix in the butter with your fingers to make crumbs.

Add the sugar, orange zest, lemon zest, egg, and lemon juice to a separate bowl. To incorporate all of the ingredients, whisk them together.

Knead the egg mixture into the butter-flour mixture to incorporate.

The dough should be smooth after it has been kneaded. Wrap the dough in plastic wrap and place it in the refrigerator for 1 hour to rest.

Make tiny balls using the dough.

Roll each ball somewhat flat, then fill the center with jam and roll again.

Roll the balls in powdered sugar first, then in caster sugar. Cook at 180°C for 12-15 minutes.

Remarks:

  • It is critical to chill the cookie dough before proceeding with the rest of the recipe. This keeps the butter from melting too rapidly in the oven and spreading too quickly.
  • The butter must be extremely cold; do not use room temperature or, worse, molten butter.
  • Frost these simple orange cookies for added sweetness. Simply combine 2 cups powdered sugar, 14 cup orange juice, and 2 tablespoons melted butter in a mixing bowl. Pour over the cool cookies. Garnish with more orange zest if desired.
  • Other toppings are optional. Try a little bitter orange marmalade or another delicious jam.

For extra taste, add almond extract to the cookie dough; this really brings out the flavor of the orange zest.
