Egg and Sausage Muffins: Delicious as an appetizer!

1 tablespoon melted butter
1 chopped carrot 1/2 chopped onion 1/2 chopped bell pepper
3 chopped sausages 1/2 teaspoon salt
4 eggs
50 mL (1/5 cup) milk
1/2 teaspoon black pepper
parsley, chopped
50 g mozzarella cheese, grated.

METHOD 1: Melt the butter and onion in a pan, then add the carrots, pepper, salt, and black pepper.

In a mixing dish, combine the eggs, milk, salt, and pepper, then add the vegetable combination and parsley.
Fill the muffin tray with the chopped sausages and egg mixture, then top with shredded mozzarella cheese.
Bake for 20 minutes at 180°C (360°F).
