BITES OF CUCUMBER WITH HERBS, CREAM CHEESE, AND CHERRY TOMATO

Delicious and nutritious! You rarely come across a fantastic two-in-one combination like this. This recipe may be difficult to pronounce, but trust me, your mouth will be satisfied when you eat it. 

The mix of tomatoes, cucumber, cream cheese, and ranch dressing creates an incredibly delicious flavor. Oh! And did I mention that this is one of the most visually stunning recipes I’ve ever seen? This is consumed by your eyes first before your mouth does the rest of the work.

This recipe comes together in less than an hour so that you can prepare a significant amount for a large party. There’s not much trouble in making this, and there’s not much to clean up afterward.

 The best thing is that it is a no-bake, no-cook dish, so most of your time will be spent just arranging this recipe in an appealing pattern. If this isn’t on your to-cook list, I’m trying to figure out what is!

Preparation time: forty minutes

The serving size is 8 pieces.

You will require the following ingredients:

4 ounces softened brick cream cheese

1 tablespoon ranch dressing

2 tbsp. fresh dill or thyme

3-4 long cucumbers, peeled and cut into 1 inch slices

15 cherry tomatoes (cut in half)

Toppings: salt to taste, paprika, or cajun spice blend

Step 1: In a mixer, combine the softened cream cheese, ranch dressing, and herbs to make the herbed cream cheese. Mix them thoroughly until they are homogenous. Fill a piping bag fitted with a star tip with the mixture.

Step 2: Wash the cucumber, remove the peel, and score the sides with a fork. Cut the cucumber into 1-inch segments. Remove a part of the center of one side of the cucumber using a melon baller, making a half-moon crater.

Step 3: Next, pipe the herb cream cheese into the crater, leaving about 12 inches sticking out of the top.

Step 4: Sprinkle salt, herbs, and spice mix for garnishing and coloring over half of the cherry tomato partially buried in the herb cream cheese. Serve chilled.
