SWEET AND SOUR CHICKEN BAKED

4 boneless skinless chicken breasts, cut into 1 inch pieces
2 giant eggs 1 cup cornstarch
1 tablespoon vegetable oil
1 granulated sugar cup
ketchup, 1/4 cup
A half-cup apple cider vinegar
2 tablespoons soy sauce
1 teaspoon garlic powder
1/2 teaspoon sea salt

Preheat the oven to 325 degrees Fahrenheit and line a 13 x 9-inch baking sheet with parchment paper.
Place aside. Salt and pepper the chicken breasts.
In a big ziplock bag, combine cornstarch and chicken breast. Shake well to coat.
In a small dish, whisk together the eggs. In a skillet, heat the oil over medium-high heat until it sizzles.
Dip the chicken breasts in the eggs and place them on the skillet. Place the chicken in the preheated pan once it is seared to brown.
Mix the sugar, ketchup, vinegar, soy sauce, garlic powder, and sea salt in a medium mixing bowl.
Bake for 1 hour, stirring halfway through, over chicken.
Serve over rice.
