1 cup shredded and well-drained zucchini

1 Egg

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 garlic clove, finely grated

2 tbsp chopped fresh chives

1 tablespoon chopped fresh parsley

1 teaspoon chopped fresh basil

1 teaspoon chopped fresh oregano

salt & pepper to taste

dipping tomato sauce


Step 1: Preheat the oven to 200 degrees Celsius or 400 degrees Fahrenheit.

Step 2: Coat a baking pan with cooking oil.

Step 3: Using a box grater, grate the zucchini. Place them on a clean cloth to dry.

Step 4: Wring the grated zucchini to remove as much water as possible.

Step 5: In a medium mixing bowl, combine all of the ingredients. Stir until thoroughly blended.

Step 6: Form the mixture into tiny balls.

7: Place the balls on a baking pan.

Step 8: Place the baking sheet in the oven and bake for 15 minutes, or until golden.

Step 9: Remove from the oven and set aside for a few minutes to cool at room temperature.
