CHOCOLATE DEPRESSION CAKE

Chocolate Depression Cake is also known as chocolate crazy cake or chocolate wacky crazy cake. Or chocolate surprise cake, created without eggs, milk, or butter. This is unexpected and sounds both strange and wacky! Baking soda and vinegar raise the cake, eliminating the need for eggs.

Cake ingredients include:
1 1/2 cups regular flour
1 cup of sugar
1/4 cup chocolate powder, unsweetened
1 teaspoon baking soda 1/2 teaspoon salt
A tsp vanilla extract
1 tsp. white vinegar
A third of a cup of vegetable oil
1 cup of water
For the icing:
2 tablespoons melted butter
1/4 cup chocolate powder, unsweetened
1 cup granulated sugar
1 tbsp. milk (or cream)
A quarter teaspoon of vanilla extract
Chocolate Depression Cake Recipe
In a large mixing bowl, combine the flour, sugar, chocolate powder, saltwater, and baking soda.
Whisk together the vanilla, vinegar, oil, and water in a separate bowl. Mix wet and dry materials until thoroughly blended and no lumps remain.
Pour batter onto an 8-inch square pan that has been buttered.
Bake for 30-35 minutes or until a toothpick inserted into the center comes clean.
Allow the cake to cool completely before icing it.
How to Prepare Frosting
Melt the butter in a small saucepan (or in a microwave-safe dish). Stir in the cocoa powder until the mixture forms a thick paste.
Pour the chocolate mixture into a medium mixing bowl. Mix in the powdered sugar, milk, and vanilla extract on low speed.
Once all ingredients are combined, increase the mixer speed to medium-high and beat for 5 minutes or until the frosting is smooth and creamy. Spread over cooled cake.
