Long John Silver’s Batter

Ingredients:

1 cup unbleached all-purpose flour

1 tsp. baking powder

1 teaspoon of salt

paprika, 1/2 teaspoon

A half teaspoon of garlic powder

1 tablespoon onion powder

1/4 teaspoon ground black pepper

1 cup iced water

Instructions:

Combine Dry Ingredients:

In a large mixing cup, combine the common flour, baking soda, salt, pepper, garlic powder, onion powder, and black pepper. Mix vigorously to evenly distribute the spices.

Add Water: While whisking, gradually add the cold water to the dry ingredients. Continue whisking the batter until it is smooth and free of lumps.

Allow the batter to sit for around 10-15 minutes. This allows the ingredients to hydrate thoroughly and the flavors to blend.

Coat Seafood: Dip your seafood (such as fish fillets, shrimp, or other seafood) into the batter, coating well.

Fry: In a deep fryer or deep skillet, heat the oil to roughly 350°F (175°C).

Place the battered seafood carefully into the hot oil and cook until golden brown and crispy. Depending on the thickness of the seafood, this usually takes a few minutes.

Drain and Serve: When the seafood is crisp golden brown, remove it from the oil with a slotted spoon and lay it on a plate lined with paper towels to drain any excess oil.
